Ability to extend Assignment due date

Currently, once you launch an assignment, you are not able to make changes and edits to the assignment date in case we need to extend the assignment. Having the ability to edit the dates will be super helpful instead of having to retire the assignment and re-create it.

    @Tina Wang Thanks for reaching out! Admins should already be able to edit the due date or completion days, even after launching the assignment. However, admins should not be able to edit the Start date for the assignment. If you are not able to edit the due date, please reach out to me on Teams with more details as it could be an issue in the system.
